Meet  the  Chef

    Dario   Correa

This is my story:

​

Born and raised in Buenos Aires, Argentina from a second generation Italian immigrants that was highly involved in the Culinary arts.

​

Hearing stories while growing up of my grandfather who has a bakery shop and watching my Mom whipping, baking and stacking layer after layer of a wedding cake while fighting the heat of the summer, inspired my curiosity in a time when kitchen gadgets & technology wasn't any other than a refrigerator, an oven and a whisk.


Intrigued by the culinary world, I decided to hone the culinary skills at the International Buenos Aires Restaurant and Hotel School (IBAHRS), where I was given the opportunity to expand my horizon and knowledge with a short internship in Tuscany that open my eyes to a whole new world in the cooking arena, interacting with guests from around the world, I learned of a new and exciting movement called Nouvelle Cuisine and rapidly made my move to Miami, Florida in 1998

 

Miami has been my home for the past two decades, working at some of the best establishments in South Florida including Barton G and The Raleigh before being recruited to the famed Blue Door at Delano as Executive Sous Chef.

 

While at Blue Door I was introduced to one of my greatest mentors, French Chef Claude Troisgros, whose simplistic approach and mastery of French techniques remains my biggest inspiration to this day.

 

In 2011 embarked on a new opportunity and accepted a position as Executive Chef at the Grand Beach Hotel on Miami Beach, placing all acquired knowledge for my first own French/Latin fusion menu for the 460 room luxury property, soon to be the newest private chain of luxury hotels in Miami Beach, and expanding to 4 different locations while accepting a new role as Food and Beverage Director.

 

In 2013, I was offered the Executive Chef position at the Iconic Mayfair Hotel and Spa, it was time to put my focus back in the kitchen, developing a brand new Menu that has every single corner of Italy represented at Spartico Trattoria, while letting imagination run wild as we cater Weddings and Special events with the 18.000 square foot of beautiful banquet space at the remarkable Gaudi Inspired hidden gem Hotel.
